Easy Sweet Cornbread

8x8 pan of cornbread and a grey and white stripe napkinWhen fall arrives you can bet that I am going to start making all sorts of different chili and soup recipes.  I love the simplicity of soup cooking all day in the slow cooker, and dinner served whenever we all get home from the day.

A few months ago I decided to add an additional of cornbread to our chili one night, something I didn’t grow up having with chili, but I’d heard many people talk about.  Well, my boys were hooked!

I think if I’d let him my 3 year old would eat the entire pan of cornbread… who knew I had never served him one of his favorite foods!  Ha!

While I was at the grocery store a few weeks ago the cashier saw my box of Jiffy corn muffin mix and asked if I’d tried it with the Jiffy Golden Yellow cake mix… I looked at her puzzled and said, no.

She immediately said, “YOU MUST”, and went and got me a box of Jiffy Golden Yellow cake mix and told me how to make it.  She said once she heard of making cornbread this way she’s never made it any other way.

I was eager to try it, and also curious to see if my boys would love it as much as the .  The verdict?  They loved it!

For this recipe you just need a box of Jiffy corn muffin mix and Jiffy Golden Yellow cake mix.  Then you add eggs, milk and water and bake it!  It’s so easy to make!

Keep an eye on how golden it becomes.  After about 20-25 minutes I spray a piece of foil and place it over the top of the cornbread to prevent it from burning.  I cook it for an additional 5-10 minutes or until a knife inserted in the center comes out clean.

The edges may be a darker golden brown but shouldn’t burn… in fact I prefer the outside pieces to the center pieces!

I must say this is not my own recipe… and I’m not sure it’s the cashiers either, but either way I thought it was one that needed passed along.  I told people about this on Instagram and many had heard of it, many hadn’t, and many had other recommendations for how they love to make their cornbread including the addition of…

  • jalapeños and corn
  • Rotel
  • creamed corn
  • cream cheese

Easy Sweet Cornbread

Ingredients

  • 9 oz Jiffy Golden Yellow Cake Mix
  • 8.5 oz Jiffy Corn Muffin Mix
  • 2 eggs
  • 1/3 cup milk
  • 1/2 cup cold water

Instructions

  • Preheat oven to 350 degrees.
  • Combine both dry Jiffy mixes and all other ingredients until mixed well.
  • Pour batter into an 8x8 sprayed pan.
  • Bake @ 350 degrees for 20-25 minutes.  Spray a piece of foil and place sprayed side on top of cornbread and return to oven for an additional 5-10 minutes or until a knife can be inserted into the center and it comes out clean.

    Have had this cornbread recipe for years. I don’t know if you are old enough to remember the Tippins Restaurants or not but there was one right here in Lenexa or OP on 87th street. They served of course pies to die for but also the most delicious cornbread. The portions were huge, served warm with honey butter on the side. Of course a salad or soup was in order to go with this cornbread or maybe just cornbread and pie. ha. Well as a substitute people started talking about how to make the Tippins Pie Restautant’s cornbread. The jiffy cake and cornbread mixture came to life. It worked quite well.

    Anyway, I was SOOOO Happy to hear from you about your upcoming addition to your family. How exciting. God does provide in His perfect timing. So miss you at the studio but know you are doing great and God is using you in so many ways. Keep the faith and keep sharing His love.

    This is seriously great cornbread. I will make it like this from now on. Tender and not dry like cornbread can be. I mistakenly put in 1/2 cup of milk instead of 1/3 cup and it turned out fine. I felt the 8×8”pan would’ve been too small so used a 13×9 and baked it a few minutes less. Great recipe.
